Yummy banana bread

I made some last night. I didn’t have a regular bread pan so I used this square pan.

The pan worked just fine. Here’s what two of the bread slices looked like.

I got my recipe from the Food Network’s website. It’s really quite easy. You cream together sugar and butter, and then beat in two eggs. In another bowl you mash up three bananas and add milk and cinnamon. In a third bowl you mix together your dry ingredients (flour, baking powder, baking soda, and salt). You add the banana mixture to the creamed mixture, followed by the the dry ingredients. After mixing everything up, you pour the batter into a buttered pan, and bake it for an hour or so.

The recipe calls for a stick of butter, but I only had a half-stick. Surprisingly, the banana bread still tasted great. In the future, I may continue to leave out the extra half-stick of butter.

Cut up bacon into small pieces before cooking it

Sometimes I like to add bacon to my vegetable dishes for the delicious flavor it adds. I was at the gym the other day, watching Down Home with the Neelys. Gina Neely suggested people cut up their bacon into small pieces before cooking it in a pan. That way, she said, it cooks more evenly/is easier to cook. I tried it today, and she was quite right!

Do not buy these empanadas

You are supposed to keep these Goya empanadas frozen until you’re ready to cook them. Then you’re supposed to start cooking them in a pan covered in oil (according to the directions). The problem with this is that the empanadas are stuck together with pieces of paper between them.

Because they’re frozen you can’t break the empanadas apart. I tried to separate them by putting them under hot water, but that made them all gross. You aren’t supposed to thaw them so I started cooking them with the paper in the middle. Minutes passed and the empanadas still couldn’t be broken apart. I didn’t think it was a good idea to keep cooking paper so I stopped. I then threw the empanadas in the garbage.

I am now hunting for a better brand of frozen empanadas.
